Stop Wasting Food
Wasting food is my husband’s biggest pet peeve, so I work really hard to figure out how to incorporate food that is reaching it’s expiration date into yummy recipes! Here is one of my absolute favorites to utilize ripe bananas!
½ c butter or margarine, melted
1 c sugar (I use coconut sugar)
2 eggs, lightly beaten
1 c mashed ripe bananas (I use 3)
1 c all-purpose flour
½ tsp salt
1 tsp baking soda
1/3 c hot water
In another bowl, stir together flour, salt, and baking soda until thoroughly blended. Add to banana mixture alternately with hot water. Add chocolate chips if you want. I usually put in a handful or two.
Then there are two options:
Pour into loaf pan and bake for 1 hour, 10 minutes or until bread pulls away from sides of pan and knife comes out clean from center.
I also put them in a small muffin tin so it cuts the baking down to 20 minutes! Test to see if tooth pick comes out clean.
