Easy Breakfast For Busy Moms

As a busy mom myself I know that time is of the essence when it comes to cooking, prepping, meal planning and ultimately eating clean and living a healthy lifestyle.

That’s why today I have this succulent recipe for you that is really easy and quick to make in advance or on your meal prep day.

You will need (2) 12 count muffin pans.

Ingredients:
Egg white liquid (large) or 2 small
1lbs Ground chicken/turkey
1/2 white onion chopped
Coconut or Olive oil
Minced garlic
Unsweetened Tomato Sauce
Garlic Powder
Italian seasoning (optional)
Steamed veg of choice like Broccoli/cauliflower/peppers

How to prepare:
Put oil in your pan just enough to brown your chopped onions and garlic. Once onion is soft add your meat of choice until browned. Add seasoning of choice, try not to salt your food if you can help it. If you like mrs dash you can use that. Then add your plain tomato sauce mix it well with meat.

Turn your oven on to 350.
11223957_10153553153016979_3248741285030851560_nThen take your muffin pans spray them with Pam so nothing will stick and start filling 1/3 with your meat mix. Then add your already steamed veggies leaving room for egg white liquid. The egg white liquid should almost go to the top.

Place in the oven for about 20 minutes. Watch them as they bake. Then take them out let them cool before putting them into Tupperware and into your fridge. Bon appetit.

I make these weekly. They are fabulous, portable anytime snacks and will keep you from getting hungry and reaching for less healthy options. These are a great protein addition if you are working hard at the gym.
