A Vegetable Side Dish That Is Easy and Delicious
Last night I was craving mashed potatoes. Yes…I am 9 months pregnant.
My husband on the other hand is a Crossfit fanatic and will only eat a protein and two vegetables. Thus my nightly dinner dilemma begins…how can we eat healthy and make it taste good too?
I saw I had a head of cauliflower in my fridge so I washed it, broke it into 1 inch sections and tossed it lightly in Extra Virgin Olive Oil with some sea salt. I then popped it in the oven at 400 degrees for 40 minutes.
I took it out and stared at the bland cauliflower. Last night I just needed a little something more to make it appealing to me. I tossed a 1/2 tablespoon of butter in and 1/2 cup of feta cheese. I took a fork to break down the cauliflower even more and then mashed it all together.
Welcome to my new favorite side dish. It’s fast, simple, vegetable based and GOOD!
